Strikeforce Main Event Breakdown: Josh Barnett vs. Daniel Cormier

May 18, 2012 – Truthfully, Daniel Cormier’s progression as a mixed martial artist has been undervalued. Not only is Cormier unbeaten, he’s done it in dominant fashion. Of his nine wins, seven have come via stoppage, with six coming in the first round. No one has yet to even be competitive with him. If he had the same resume in the UFC, he’d be buzzed about as the next big thing, a title challenger waiting in the wings. As it is, he’s done it mostly under the radar.

That might change for good on Saturday night.

His Strikeforce Heavyweight Grand Prix final opponent Josh Barnett has earned a level of stature and respect that would benefit Cormier if he can pull off the win. If he does, it will put a properly unexpected exclamation point on an utterly unpredictable tournament.

When it began in February 2011, Cormier wasn’t even an official entrant. He was an alternate, and not even the first one, as that designation was supposed to go to Shane del Rosario.

But fate stepped in. Zuffa bought Strikeforce, del Rosario was badly injured in a car accident, and Alistair Overeem was cut following an issue with his management.

That left Cormier with a chance to step right into the semifinal, and he blasted his way into the final, knocking out Antonio Silva in a first-round finish last September.

The dominant win put into perspective what a quick study Cormier has been. He came in with a brilliant wrestling resume — two-time Olympian, international star, and collegiate All-American — but has done his best work in the standup department.

Those offensive numbers are outstanding. The most significant ones show that while he finds his target, he doesn’t often take return fire. According to FightMetric, Cormier lands an average of 3.67 strikes per minute, but is only hit .98 times per minute. That is particularly impressive given that at 5-foot-11 and with a 71-inch reach, he is often at a height and reach disadvantage.

That will again be the case against Barnett, who is 6-foot-3 with a 78-inch reach.

Barnett (31-5) is a very well-rounded fighter. While he’s made his bones as a submission artist (he has 17 tapout wins), he’s well versed in striking and wrestling as well, skills that have allowed him the versatility to exploit holes in his opponent’s game at times.

He has a striking accuracy rate of 48 percent, a tick better than Cormier’s. Surprisingly, he’s fared far better on takedowns, 58 percent to 27 percent. And he works well in the 50/50 positions.

But Barnett knows where his bread is buttered. He believes himself to be superior to any opponent on the ground, so he’s usually insistent on putting the fight on the mat at some point. Barnett does that with his own style, favoring a form of Greco-Roman wrestling that is heavily reliant on body locks and trips.

While Cormier was primarily a freestyle wrestler by training, he’s very well schooled in Greco-Roman as well, so Barnett will have his work cut out for him to take the fight down. As mentioned, Barnett has a 58 percent success rate on takedowns, but on the other hand, Cormier has yet to be taken down even a single time in his pro career. That’s a point of pride with him, and so it’s going to take something overwhelming to get him down.

So a lot of this fight hinges upon whether you believe Barnett can take the fight down. If he can’t, then what? One possibility is that Cormier might want to take Barnett down. That though, seems unlikely. Despite his pedigree, he hasn’t featured takedowns as a major part of his offense.

So we might be left with a standup fight, or some semblance of one. I think Barnett will exchange, but also try to work Cormier against the fence and look for positions for the takedown. Cormier, who strikes well from close range, is eventually going to find a way to free himself.

Back in the center of the cage, he’s grown comfortable with his striking. That’s going to happen training at American Kickboxing Academy. While he doesn’t necessarily throw together advanced combinations, he pulls off the basics very well, and he has power. In his last fight over Silva, he also showed he was capable of navigating the distance necessary to land that power. Cormier excels in close distance, and because Barnett likes clinches, that could mean trouble.

This is a close fight. Most lines have it as a pick ‘em bout for good reason. Barnett knows every trick in the book, but Cormier has a world-class skill, the aptitude to learn, and the ability to put what he’s practiced into action. He also has a great training partner in Cain Velasquez, meaning he’s been put through the ringer many times, so he won’t be overwhelmed by anything Barnett does.

If Barnett can get Cormier on his back, he’s capable of finishing. I just don’t see him getting it there or keeping it there for long. If Cormier dictates the location of the fight, he’ll win by landing the more significant strikes. This wacky tournament seems destined to end in some unexpected way, so Cormier by knockout.

$22 lunches, $33 dinners at Chicago Chef Week

Ready for another week of affordable, multi-course meals at top Chicago restaurants?

Heck, yeah. 

Chicago Chef Week is underway, running through Saturday, during which some 52 restaurants will feature three-course lunches for $22 and three-course dinners for $33.

It sounds a bit like Chicago Restaurant Week, doesn’t it? Same prices, and indeed, some of the same restaurants. This week is a bit shorter and has far fewer participants, but you’ll still be able to dine at the likes of Avec, Big Jones, Bistronomic, Boka, C-House, Cibo Matto, Green Zebra, Hearty, Mana Food Bar, MK, Nana, Nightwood, Perennial, Sable, Sepia, Sola, Terzo Piano, Veerasway and Zealous.

You can find all the participating restaurants, and make online reservations, at the Chicago Chef Week website. Clicking on individual restaurants will link you to their respective sites, but as of this morning, very few had bothered to post their Chicago Chef Week menus. Think of it as the thrill of anticipation.

After dinner, leave a little something extra for earthquake victims

If you’re dining out this week, and I certainly hope you are, you might notice a little something extra in your check presenter (you know, that leather-ish thing holding the bill). An appeal for help.

Chef/owner of Takashi (1952 N. Damen Ave., 773-772-6170), Takashi Yagihashi, has family in Japan. “Fortunately, my mother and sister are fine,” he said. “But many people need help.”

So he put little notes in his check presenters, asking customers to consider leaving a donation for the victims of the Japan earthquake. Nothing much, just $5.

“If people don’t (give), I won’t be hurt,” Yagihashi said. “But I thought I’d ask.”

A lot of people left $5. Quite a few left considerably more, and Yagihashi figured more people, more help. So late last week he reached out to about 80 of his fellow chefs, asking if they’d put little notes in their check presenters. He’s not keeping track of which restaurants will participate.

All the money is going straight to the Red Cross in Japan.

So if you see a little note in your presenter this week consider putting that extra fiver to good use.

Friday @ 5: A cocktail to kick off the weekend

The past few days’ warmer climes are a dead giveaway, but for those who prefer to celebrate by the book: Spring officially begins Sunday.

(If you’re annoyed by the fact that this column so often begins with a reminder as to what holiday or season is on the horizon, apologies. Let it be your constant reminder to drink in season, just as you should eat in season.)

More important than the fact that yesterday was St. Patrick’s Day, or that a certain day this year marks the 244th anniversary of the invention of soda water, the start of spring gives us permission to polish off our brown liquors and move into lighter territory (think gin, tequila, light rum). True, bourbon remains an excellent transitional spirit to be enjoyed in the months warming up to Derby Day in early May, but toasting the equinox deserves a bit more effort.

That said, go out. Yes, this column primarily encourages staying in and trying your hand at drink recipes. This weekend, go out. Yes, in the rain. (It’s part of spring, after all.) Sit somewhere with windows that have the capacity to open up to the elements, even if it’s too cold to do it just yet. Allow yourself to daydream about temperatures that reach into the 60s. No — the 70s. We’re almost there, folks.

This is the cocktail you should drink while you’re waiting: The Soiled Dove at Bangers & Lace (1670 W. Division St., 773.252.6499).

Comprised of silver tequila, dry sherry, agave, lime and grapefruit juice, it’s served in a Collins glass with ice (it’s been a long time since you had a tall drink, no?) and is finished with bitters and black salt. Alfa Romeo 8C Competizione by Wheelsandmore

The past few days have been chalk full of tuning programs from German tuner Wheelsandmore, and now they are adding another one in the mix. The first package was called the Lamborghini Aventador “Rabbioso”, which was then followed by the Ferrari 458 Perfetto. Now, the third package is based on an even more impressive sports car: the Alfa Romeo 8C Competizione.

As usual, the package includes a cool exterior kit, as well as two stages of engine upgrades. The first stage takes the power up to 470 HP, from the standard 450 HP, with the use of an ECU upgrade. Total price for this upgrade is 1680 euro ($2,138 at the current rates). The second stage goes even further to 485 HP. This stage includes an ECU upgrade and a handcrafted stainless steel exhaust system with remote-able valve flaps. The price for this upgrade is 6720 euro ($8,552 at the current rates).

The exterior kit starts with a new set of 21″ ultralight forged wheels, but the tuner is also offering unlimited color and surface finishes as well as an upgraded carbon look design with white outliner and inlays.

Chicago chefs pair with farmers at Localicious festival tonight

Chicago chefs from more than a dozen restaurants, including Old Town Social, Big Jones, Osteria Via Stato, City Provisions, will pair up with local farmers and local brewers and vintners to present Localicious one of the tastiest and sustainable food fests of the year. Tickets are $75.

The party is part of the Family Farmed Expo, a three-day event of workshops, discussions and lectures that finishes Saturday with the family and foodie-friendly Good Food Festival at the UIC Forum (725 W Roosevelt Road).

Dozens of farms will have booths for those who want to shop around for a CSA subscription this year, top Chicago chefs–including Stephanie Izard (pictured right), Bill Kim, Paul Kahan and Paul Virant–will present cooking demos and local food authorities will present workshops on everything from keeping backyard chicken and canning to gardening and whole animal butchery.

Author and Weston Price Foundation founder Sally Fallon Morell (interviewed by the Tribune here) will give a lecture on healthy traditional diets at 9 a.m.

Food festival tickets are free (for kids under 12) to $35 for all access including the Fallon lecture if you buy them before Saturday. Adult tickets to the festival alond are $10.
